Peanut Butter And Caramel:D
This is another firm favorite, definitely one for the girls! Yummy Peanut butter cake, with a homemade caramel filling, caramel blended buttercream and lashings of chocolate to top it off. YUM.
I love the soft sponge with a bite from the peanut butter. Peanut butter is one of those amazing things that just instantly flavours whatever you want perfectly, from milkshakes to toppings to cakes, it always keeps that distinctive delicious taste. (incase you can’t tell, I am a serial peanut butter lover)
Also it’s not as sweet as the cinnamon and apple cake with caramel. The peanut butter is mild compared to the caramel filling, and the frosting is quite light aswell so again not over poweringly calorific.
Next one to try is peanut butter and jam! OM! xxx
This isn’t a new creation i’m afraid, but I just stumbled across some more cupcake pics that I can show you. This is such a sweet little cupcake and so easy. It’s plain vanilla cupcake with a 7 minute marshmallow frosting (below) and a wee flake.
So, I guess I had better let you into some of these cupcake secrets… now, i’m gonna take it slow as it’s not easy for me to do this ;)
So, this wonderful frosting is so so simple, it’s great and fluffy, not too sweet or as a dense as buttercream or fondant. Also its a great one to do if you have no icing sugar. There has been so many times i’ve made a batch of cupcakes, gone to the cupboard to make the buttercream and bugger…muffins it is! Well, not anymore!
So here goes…
This ices around 30 cupcakes. Remember to use a big bowl as it really increases in size. If you dont want so much just half the ingredients.
250g Caster Sugar
8 Egg Whites
1 Tsp of Cream of tartar
Mix with an electric mixer the egg whites and the sugar in a double boiler for 3 minutes, whisking constantly. Take it off the heat and whisk for a further 4 minutes. By this point is should have glossy white peaks, ready to put in your icing bag and swirl out some beautiful creations :D
See? So simple.
You can add various food colourings to it, I love to add a tiny amount of pink to get a real off white pinky colour. You can also use this as a great filling. You’ll see this featuring in quite a few of my cakes.

Cinnamon Caramel Apple Pie Cupcakes :D
Wow, so i’m a top contributor huh? Not sure how that happened so quick but thanks for all the cupcake love! Im dying for inspiration so i’d love LOVE love to hear any ideas you have for cakes, if i make it i’ll let you name it!
So yesterday I stumbled on a recipe for apple pie cupcakes, i’ve since lost the link to the recipe but it was only the idea that i needed. Anyway, as soon as i saw the picture I made them.
These babies are my new ultimate favorite cupcake ever. It might even beat chocolate. Yep…shut the front door!
They’re quite hard work, and a bit fiddly but it’s like a little cinnamon orgasm in your mouth when they’re ready. (I’m having a modest day)
So basically, it’s my usual cupcake recipe with some cinnamon powder, scoop out the middle once its cooked, in goes some caramel sauce, (or should be, i used maple) some apple pie filling, or microwaved cooking apples, top it with some caramel (maple) cream cheese frosting and you won’t leave the house until they have all gone. :D So really, it’s recommended that you only make a few at a time…
Sorry the photo is a bit crappy, i topped the icing with some maple syrup and it doesnt have a nice effect the morning after. Anyway, i’m off to drink tea and gorge on cinnamon goodness :) xxx

Cupcake Bouquet Day
Hello! Today i’ve been celebrating my new Wilton icing kit! You know it’s bad when you get excited over some icing nozzles…but so be it! I was rushing a bit but look at the lovely effect the 1M nozzle has, on smaller cakes they would look like lovely wee roses:)
The cupcakes aren’t terribly exciting, just plain vanilla with some pretty pink and purplish buttercream frosting. I’ve been dying to try making a cupcake bouquet for ages and I finally got around to trying it.
The cupcakes are defying gravity and are only held in by some cocktail sticks that are in an oasis, i’m not sure how long they will stay there but i can’t imagine they will need to stay put very long to be honest!
It’s been a very exciting week for Cupcakes by Lucie, I started selling my cupcakes in a local shop and so far so good! To be fair, I think most of the sales have been by people I know but they have sold anyway hooray! If you are local head down to Best One in Soham and try them for yourselves!
Anyway, i’m off to watch Top Gear, not very cupcakey I know but sometimes…a girl’s gotta look at nice cars:) Cheerio! xxx
Lemon Meringue Cupcakes
These beauties are definintely for those with a sweet tooth. With a lemon curd centre, lemon frosting and topped with a meringue, it is pretty sickly but still delish! Made in a bit of a rush, late night and couldnt reaaally be bothered to put much effort into the icing so excuse the presentation!
In retrospect, the sweetness would be easier to handle if the frosting wasn’t so sweet. I used a cream cheese frosting with lemon zest, but with the sweet cake it would be better with a plain vanilla cream cheese frosting, or even a whipped cream frosting would be even better to balance it out.
I will definitely make the cake again however, it’s a lovely light little summertime cupcake:)
Chocolate Brownie Cupcakes
The bf isn’t a lover of icing, however i’ve discovered he is partial to a bit of chocolate icing so it gives me a good reason to make lots of chocolate cupcakes! Hooray!.
This started out as a rockyroad wannabe but ended up more like chocolate brownie! So Chocolate Brownie it is.
I used my standard cupcake mixture but added huge chunks of dark chocolate, heaps of bourneville cocoa and chocolate and vanilla mini marshmallows. The marshmallows were an experiment, I had no idea if they would just melt into oblivion or stay to tell the tale. Unfortunately they did melt away but gave the sponge a real sticky consistency, so whilst being undeniable cupcakes, they taste like chocolate brownies. Yum!
Combined with chocolate buttercream, chocolate curls and homemade chocolate sauce, we have one of the most decadent cupcakes in my directory, but a firm favorite in this household!
